Caramel Sauce
I have made this cider many times and even served it at my wedding.  I got this recipe from and made a few changes to it.  Combine sugar and apple juice in carboy. Shake well. Pitch yeast after the sugar has properly dissolved in the apple juice. Let this ferment for 3 weeks. Once fermentation has completed, rack to a secondary and add 5 crushed campden tablets. Let this sit in the secondary for 24 hours. After this, add 12 oz. of the cinnamon dolce syrup and 5 cans of apple juice concentrate and keg.

Recipe for syrup:
2 cups of water
2 cups brown sugar
2 tsp. ground cinnamon

Combine in a saucepan and bring to a boil. Once boiling, reduce heat and simmer for 5 minutes (or until volume has reduced by half). Let this cool and then add into bottling bucket or keg.
